As for another technique, instead of transfering the beer into secondary, couldn't we just siphon the trub out of the primary and leave the beer there?

Dude, totally agreed. We stopped doing a secondary for our short-term ales; we just go straight to the keg and dry hop there if need be. I think if we do a long-term ale like a barley wine, we might do a secondary, but then again, maybe we'll just buy another keg!

ya, unless you have a specific reason for adding the spices in the boil, i suggest definitely using some whiskey (bourbon?) to make a tincture and add it close to bottling. i think a lot of the flavor will boil out. can also take a measured sample and add drops until desired taste then scale this up to the total amount of beer.

also dont know where to get aromatic malt , beergeek has caraAroma, so close but probably a lot more caramel color and taste. never used either though

If I recall right, you want to mash it on he lower side to dry it out some. I believe it was 148.
