The recipe looks good. I made a small stout a few years ago and "dry minted" it with fresh mint from the garden. Came out tasting minty delicious. Wish it had more body, which yours looks like it will. I think I saw that Stone put out recently a mint stout.

You know I was strongly considering using fresh mint leaves but was feeling timid about the flavor really coming through. I tried the Stone Chocolate Mint collab and it's delicious. From what their brewer's said, they also had trouble finding the right amount or strength of mint to use to pull the flavor through into the beer. The extract is a total shot in the dark and a last minute idea I had so I'm crossing my fingers it goes well.
