Hi, your Open By Christmas recipe looks pretty good. I was wondering what the vanilla actually is? Extract? Pods? Also the oranges, do you use the juice and peel as in previous recipes or just the peel as stated? much thanks

It's Vanilla Extract. I never wanted to hassle with the variability and pain of doing the whole vanilla bean soaking thing, so I fine-tuned the amount of real (not imitation) vanilla extract to use over the years. Good luck with the recipe! :-)

Oops...I use the peel (grated off the oranges) in the boil and the juice of those oranges after the wort has cooled.

Maybe I am not seeing it, but what yeast are you using for your holiday standard? It doesn't download with recipe.

I'm not sure why it's not showing up...must be my bad. Either way, I always use Safale 04 dry yeast. I get consistent results that I'm happy with. Good luck with it! :-)

I forgot to say on the pumpkin ale to split the salts between the mash tun and brew kettle (sparge water). In other words, the additions are for the total water volume, which is RO.

How did you remove the pumpkin after 1 hour? I have 2 kettles with kettle screens. Start with one then transfer to the other tor for the last 1/2 hour? Just wondering how you did it.

I add it into the boil (in every recipe I brew unless I'm out or forget).

Your Muddy Pig Oatmeal looks good. Since Edme changed the yeast what liquid yeast would you recomend? White Labs 002 maybe?

I only mash the grains that require mashing. The rest I add about ten minutes before vorlof. (last stir).Keeps the PH of the mash lower. I think that helps as well.

I adjusted my barley crusher out(open) a little.
I fly sparge. I think the lactic acid (in the mash)helps to get the efficiency up as well.
I also use a special false bottom. It's slotted instead of having all holes. Cost more but well worth it.
I really can't believe the efficiency I'm getting either but it's happening every time.
I guess everything is in the sweet spot as far as equipment etc.

brewdog...looks like you're getting some great efficiency with your sparging--do you batch or fly sparge? if so, what steps do you take? i'm struggling to get better efficiency w/ my mashes (fly sparge). any advice would be appreciated. your recipes look tasty!
