I was looking over this recipe and it lists a 90 day secondary for the sour cherries, is that correct? I have never left anything in secondary that long.

How did you come about the "Oaked Cherry Cardamom Belgian Quad" Recipe? I've seen this exact same recipe listed as a Kasteel Rouge clone attempt recipe without the oak chips and some of the other smaller tweaks. Just curious if you think it might make for a good Kasteel Rouge clone with some tweaks.

A local brewery here did it for their 25th anniversary and it was fantastic. The brewer gave me the recipe on how to do it on my brew rig. I've never had Kasteel Rouge so I can't really say if this is close or not but I would check it out at the local liquor store if they have any and see. If it's close then i say go for it ;)

ok. i didn't realize Oaked Cherry Cardamom Beldian Quad was a commercial beer. Is that what the actual name is that I would look for?

It's not a commerical beer as in one that you can go out to a store to buy. It was made by a brewery here that is local and operates their own brew pub. That is the only place you could buy it at.

Any feedback on how this beer turned up ? I am thinking to do 10 galons of it. Sounds pretty good. What Brett B did you add (what brand & #)
