1/4 pd munich malt
3/4 pd cooked rice
3/4 pd flaked maze
1 1/4 pd crystal 20 L
2 oz williamette hops 60 minutes
2 oz williamette hops 5 minutes
1 teesp Irish moss 15 minutes
wyeast 1056 American ale
3/4 cups corn sugar for priming
6 1/2 gallons water
mix grains for 30 minutes at 135 f,raise temp to 160 f for additional 30 minutes,sparge and collect wort. bring wort to a boil,add 2 ozs William hops,boil 45 minutes,add Irish moss boiling for 10 minutes,add 2 ozs williamette hops ,boil 5 minutes,cool wort ,pitch yeast,first fermentation 5 to 7 days,second fermentation 3 to 5 days drop temperature 40 degrees,condition additional 2 days,bottle or keg ,age 3 to 4 weeks before serving
