Hello there! i am a wannabe brewer from India and i have long wanted to brew my own beer and now i have taken the first step and the sorghum is steeping as i write this. i have no previous experience and totally reliant on the internet to go through. I have no idea what is the variant of Sorghum(it is white that much i can say) i am using as i am just using whatever is available commercially. so here is the rough process i have framed gleaning from various sources. I know it would make sense to start with beer and me and a friend are brewing together, he wheat and me sorghum.
1. Clean etc.
2. steep at room temp. right now it is about 26-30 deg c where we are at. Steep for 16hrs.
3. Air rest for 2 hrs on plastic sheet, thinly spread.
4.steep again same as 1.
5. germination for about 2-3 days.
6. Stop the activity and kilning etc.
7. Mashing process/temperature to be decided. This is where i need help wrt temperature of boil, longevity of boil etc since i have a lot of confusion from referring multiple sources.
Any other suggestions for corrections, modifications in any step is welcome.
Thanks in advance.
