OK. We're pitched @ 9:15 PM. No problems occurred, although I did have a little boil over at the break. Nice belly button vortex. Took a good picture of the wort after pitching the yeast for a color comparison later.

Yes. Look at the mash part... Don't understand it, Don't know what "Mash out" means, and don't know how we would get the sparge ready during a "Mash Out" of only 10 minutes.

Also, very important but known by few, is the meaning and pronunciation of our name, "Wyeast" (pronounced why-east) which is derived from a Klickitat Indian legend that relates to the origins of the geography of the Pacific Northwest to a tragic love triangle involving chief of the Klickitat, chief of Wy'east and the maiden Loo-wit, over whom the chiefs quarreled.

OK. I am starting to panic a little. The vortex became visible again before I went to bed (still looks perfect), but I'll be damned if I can see any evidence that we are fermenting. There is a yeast smell, but I can't really tell if it is doing anything. Since we are circulating, I don't see any schmootz on the bottom, and there is only a very small amount of foam on the top... We may need to consider going back to the store for more packets.

For our hybrid, a starter with stir plate would have been 2 smack packs in 1 liter. And Mr. Malty says 12 - 18 hours and you are good to pitch.

It started bubbling in a couple of hours at about 5pm. Wow...

When I got home around 3 it was bubbling big time. Bubbles out the top of the sanitizer again and a ton of flaculation.

That's a relief. We should add a note about this in the notes section of the recipe.
