Notes

Was ambitious on this one and did it following/during another 10 gallon batch of stout. Hence, longer mash 90 minutes due to running around doing stuff for the other brew and sparge temp not up to temp. Temp was 147 after. 16.5 (1.068) OG. Lessons for next time doing 10 gal x 2 batches. Mill both grain ahead of time, prepare 4 carboys ahead of time, heat HLT sooner with less water so it is ready at the 60 minute mash time. Sat too long in the mash tun. Trying to take care of that and the other beer was hectic. After mash, all was smooth and hop additions, etc. were made with perfect timing. Cut down recipe from 2oz Motueka to 1oz Moteuaka in last 10 min addition. 10/23/2012 still fermenting aggressively, the chai stout brewed same day is done.
