Scaled down from a 5 gallon recipe to a 4 gallon recipe to accommodate available hop amounts.
Planned on adding 2g of calcium chloride but homebrew shop didn't have it. So just excluded it on this batch.
Only had 4oz of Crystal 10
Used 2oz of Crystal 15
Pre-mash: 10.75" from top
5.7 gallons
Pre-boil: 9.75" from top
5.18 gallons
11 brix = 1.043 SG
Post boil: 7.8" from top
4.15 gallons
Post chill: 7.4" from top
3.93 gallons
12.2 brix = 1.048 SG
Re-hydrated yeast with one cup of boiled water that cooled down to 90 before pitching yeast. Waited 15 minutes and stirred. Then let get down to 75 before pitching it.
Fermented at 65 for 6 days. On 12/17 at 11:00pm I ramped the fermentation temp up to 68.
Ramped up to 70 on 12/19 at 9:00am.
Dry hopped on 12/23 at 4:00pm.
Set ferm chamber temp to 35 on 12/26 at 3:00pm.
6 brix - 1.009 (verified with hydrometer reading which also came on at 1.009)
Bottle 35 12oz bottles on 12/28/2015 at 12:00pm.
