Add 11 quarts of water to mash tun heat to 141 degrees add barley malt less 1 pound and allowed to rest around 130 degrees. Add 2 quarts of water per pound of grain to the cereal cooker 4 pounds rice and 1 pound barely. Raised 150 degrees allowed to rest for 15 minutes raise to boiling and boil for 30 minutes stirring continuously. Add cooked cereal to the mash a little bit at a time and raised 150 degrees. Add cold water as necessary until all the cereal has been added in and at 148 to 150 degrees. Hold for 1 hour. Mash out and sparge as usual.
