Notes

Modified BYO recipe https://byo.com/stories/issue/item/3264-1905-holiday-ale Supposed to be all Cluster. Subbed Perle and Liberty, only had 0.1 oz of Cluster. Mashed with grains in Muslin bag. Had trouble holding mash temp. Ended up with 0.66-0.75 gallon. Topped off with distilled water. It's a good thing I erred on the side of high IBUs. Hydrated yeast. Pitched 80% of liquid into 3G Celebration Clone, pitched rest into this beer. Originally wanted to use 1272, but this was easier. Hit it with pure O2 for about 30 secs until wort almost bubbled over. Bottled 12/18/16. FG 1.005 at 70F.
