11-21 4 gallons of 135 strike water added 5ml 88% lactic acid and salts to strike water settled to 125F pH 5.68 added 1 ml of 88% lactic acid pH 5.7 13 gallons HLT 7g gypsum 4.4 CaCl 2.8 baking soda 2.3 chalk 2 ml of 88% lactic acid added 6 gallons to HLT +40 min second step 186F 5 gallons settled to 130 added 2 gallons of boiling water settled to 135 ish too much in mash tun, removed about 4-5 gallons to boil kettle and heated to about 152 and added back to mash tun. settled to 140 after good recirc, finished at about 142 collected about 13.9 gallons of 1.054 wort. boiled per recipe collected 11 gallons of 1.072 wort. pitched at 62-63F.
