Same recipe. pH around 5.2 and temp at 67C/153F.
Ver 01
I went with Brunwater's Amber-Balanced water chemistry profile and the pH ended up at 5.35 which is perfect.
I have two consistent problems with my beers using BeerSmith: 1) Mash temp is consistently low so I regularly add 3C to the recommended strike water temp, and will try adjusting the settings to account for the temperature of my grain, and 2) I never get enough wort, and only get the finished amount (23L or 6G) instead of the desired pre-boil amount of 27L or about 7G. I'm going to play with the grain absorption settings after measuring exactly how much water was absorbed by weighing the post-sparge grain vs. the starting weight.
Got 151F mash temp insted of 152F even after increasing the strike temp, but close enough. My tun kept the temp well, but after I added the mashout water I didn't get anywhere near the desired temp, so will also increase that next time. Sparged as usual and boiled, with a 1.049 pre-boil gravity, perfect.. Got a great hot break, add the hops per the schedule and chilled down to 23L.
