That'd work, but also just 1056 would be fine. The high FG is more from the mash temp and gravity; yeast attenuation limits are going to leave this at at higher FG, but should be well hidden due to the ABV

by HydroRamPacDid you also use Scotch Ale yeast? BY the FG being 1.025 I would tend to believe so. Thanks
