Notes

BREWDAY 08/30/15: Mash: mashed in at 148F. MASH PH: 5.31 Raised temp to 150F. Held at 150F for 75min. IODINE TEST: Pass Recirculated for 15 minutes while raising temp to mash out 170F. Held for 15 minutes. Slow sparge. PREBOIL GRAVITY: 1.053 BOIL PH: 5.24 Boiled hard for 75 minutes. Additions made on time. Added 0 min boil hops naked into kettle and whirlpooled for 10 minutes then let stand for 20 minutes. Ran wort through hop rocket with "steeping hops" slowly and into chiller. Chilled to 66F. ORIGINAL GRAVITY: 1.067 Added 2 minutes of pure O2. Pitched 2L of starter (at high krausen - 24hrs after pitching) at 79F into 68F wort. FERMENTATION LOG: 08/30/15: PM: 66F. positive CO2 pressure. 08/31/15: AM: 67F. positive CO2 pressure. Very active. / PM: 66F vigerous. High krausen. 09/01/15: PM: 66F positive CO2 pressure but slowing. High krausen remains. Gravity at 1.029 (55% attenuation at this point). Added simple syrup with aprox 600ml filtered tap water, 10 oz corn sugar and 1/4 tsp fermax (all boiled for 15 min and cooled to mid 70s). Raised temp on controller to 67F. Sample tasted great. Lots of juicy / fruity hop character. 09/02/15: PM: 67F. postivie CO2 pressure but slowing. High krausen remains. Gravity at 1.024. 09/03/15: PM 68F. Very little positive CO2 pressure. Krausen appears to remain. Gravity at 1.019. 09/04/15: Prepared a 800ml starter with one vial of WLP090 (SD Super Yeast). 09/05/15: AM: 71F. Added 6oz dry hop (one oz each of the same hops that went into flameout). Added starter to help finish fermenting the beer. 09/06/15: PM: 71F. Gravity at 1.016 09/09/15: PM: 71F. Gravity at 1.015. Set temp controller to 65F. 09/13/15: PM: 66F. Gravity at 1.013. Set controller to 45F to cold crash. 09/19/15: Racked to Keg. Final gravity 1.013. 09/20/15: Added 3 oz (0.5 each of Citra, Simcoe, Amarillo, Mosaic, Galaxy and Nelson) dry hop to each 5 gallon keg. Began forced carb at 30psi. 09/24/15: Began serving first keg.
