Taste Notes

Gold medal 2012 Enchanted Brewing Challenge. White wine and strong ale mixed well together. Very good and complex brew. Heaven!

Notes

[Midas Touch Clone from Sam's book] Brew Notes: 1) Added 1/2 tsp CaCl2 to mash water when heating. Mash was thin due to calc error. 2) Mash pH (at Time 0) = 5.6 - 0.3 = 5.3 pH 3) After 30 min. mash pH = 5.5 - 0.3 = 5.2 pH 4) pH in fermenter at 74 deg F = 5.5 pH 5) Starting gravity = 1.080 at 74 deg F = 1.082 (Without muscat juice) 6) Pitched 2 different yeast packs: Wyeast Northwest and American Ale at 70 deg F. 7) Aerated with O2 for 30 sec. 8) 2.75 gallons went into fermenter set at 66 deg. F. 9) Added muscat grape juice after a couple of days into fermentation. Added grape juice on July 14 and aerated about 15 seconds. Lots of foam forms. Gravity before grape juice was 1.040. --ON 7/18, 1.036 gravity. --7/27 Moved to secondary, gravity= 1.018, and added 2.5 mL Biofine. ---Bottled 8/9/11 with 2.3 ozs sugar to 2 gallons. Final Gravity was 1.014. Good taste, lots of alcohol with a dry but not harsh finish. Very cool! I estimate the ABV to be around 10% since I had no gravity after grape juice addition, this is an estimate.

I used Alexander's Muscat Grape Juice from Northern Brewer:
