Notes

Mash temp was too high to start, (~72-74) -- did this denature enzymes?? Topped up with a few litres of cold water... Can't wait for RIMS! First fly sparge. Efficiency was very bad. Remember to do it SLOOOWLY and prepare more sparge water. Also, stop when you hit the target pre-boil volume, you didn't this time! When gravity is low, adjust it, as hops schedule will otherwise be out of balance (SG:IBU). Don't just opt for a smaller beer. Consider changing over to tap water now, from bottled for sparging -- work out acid additions. Whirlpool chill worked well. Remember to adjust volumes up where there are lots of hops. Use a refractometer. 18 Sept: Dry Hopped 42g Citra, 50g Pacifica - 1020 G -- upping temp for a few days... 22 Sept: Dry Hopped Amarillo and Pacifica -- final dry addition -- didn't test gravity. 24 Sept: 6.30pm -- turned down fridge to 0C -- cold crash 28 Sept: Bottled -- 35 x 500ml = 17.5 L
