Notes

8-10 grams of freshly steeped darjeeling/Lady Grey tea added to primary if desired. Tea should be steeped at around 80 degrees for around one minute, before straining; any longer will extract excessive tannins. A second infusion can be added using the same technique, until the desired tea flavour has been achieved - I added two infusions and the result was excellent. Note - The colour is actually closer to a clean toffee/caramel once the black tea has been added.
