Taste Notes

Mash at 66 C or 151 F. This is a very robust recipe producing a highly complex beer but also an easy drinking one. Schwarzbier is strictly a lager but this recipe can be brewed using the above yeast and ale fermentation profile without any compromise of quality. Try adding the specialty grains at the start of mashout to increase the complexity. Source: Patrick Hollingdale

Notes

Gydning: 13 første liter uden gydning 1067. Herefter gydes: Gydet 5 liter, 15 min pause med pumpe, målt 1048 i slangen, tappet til 18 liter. Gydet 5 liter, 15 min pause med pumpe, målt 1030 i slangen, tappet til 23 liter. Gydet 6 liter, 15 min pause med pumpe, målt 1020 i slangen, tappet til 30 liter. OG 1046 Meget protein-måske 6 liter tab. Der kom kun 16,5 liter i spanden. 1. juni FG 1031 Tap, smag kraftig, krydret næsten pebret først, vandet eftersmag. Ikke super lige nu. Bliver måske go ved lagring, trænger til afrunding. Der var 16,5 liter i spanden. Fustage bliver ikke fyldt helt op.
