Notes

Went into this not knowing what I was in for. Split the wort into two buckets for primary - 3.5 ish gallons each. They're in the corner of the basement where the temperature is consistantly around 57 degrees. Pitched with about one third the yeast that I need. Going to Titgimeirs tomorrow to get 2 more packets of 2308. 1/5 added 2 more packets (unsmacked) of 2308 to the wort - one per bucket. Evening (heated) temp in the basement sits around 58. Daytime temp in the basement is 56ish I put a bucket of Starsan in the same corner and stuck my thermometer in the liquid. It sits around 50 degrees constantly - sometimes hitting 51 or 52. The fermentation buckets were bubbling the 3rd and 4th day, but I haven't seen anything since then. Racked to secondary on 1/21 Measured Gravity 1.030 2/17 Temp reached freezing today. Should be scraping ice by Friday SG measured at 1.026 3/3 still at 1.026. FEH No ice forming yet began reducing the temp to get to ice formation 3/10 Temp down to 8.5 WE HAVE ICE! Actually... we have slush
