Notes

BREW DAY 03/15/14 - Went off pretty well, accidentally added Ahtanum hops early at 5 mins instead of at flame out at 55 mins. Failed to enter 1/4 gal mash tun loss in to brewsmith so final post boil vol was approx 4.75 gallsons. It was decided not to top off the batch to 5 gallons. Took 2 hydrometer readings, 1 immediately after the wort was chilled to 68 degrees which was 1.062, another later with the wort still at 68 degrees came out at 1.066. Double checked second reading and it appears to be accurate, though according to brewsmith if we got that OG our efficiency would be something like 99.1% which seems impossible. Will do some calibration tests on hydrometer when racking to secondary to confirm most likely OG. Recording both readings in the notes for later. Due to (apparantly) high gravity, current projected ABV is 7.4% which would put this at the low end of an imperial milk stou in terms of ABV. Even if the first reading of 10.621 was correct our projected ABV is 6.8% which is also up there. 03/16/15 - Evan tells me fermentaion has begun and is vigorous but not getting into the blowoff tube. 3/21/15 - Tested hydrometer, corrected OG is 1.060, grav in primary now is 1.024. Beer tastes good, a little green. will leave in primary for another week or so. 3/26/15 - Took additional gravity reading, fermentation is stuck for sure, still reads at 1.024. Will re-dose asap 3/29/15 - created starter to re-dose, will dose again in 12 hours or so. 4/11/15 - Re-dose didnt take, making another starter with liquid irish ale yeast and stir plate, will cold crash and try dosing one more time
