Notes

Yeast attenuation set to 73% to give AA of about 76/77% for WLP005 at 66C. Two stage starter (2 x 1L) which should give about 10% more than the required cells. Efficiency upped to 72% for new fresh-milled grain. This could go higher possibly at this low gravity, so will try and fine tune with boil off. Recipe modified to include Fuggles and Progress as new bottle label says Goldings, Progress, Fuggles, Challenger. Not sure if that order is correct in terms of quanitity, but going with it. Reduced wheat to 3.5% as Ringwood bottle not holding that much head, upped Crystal (5.5%) very slightly to try and hit colour and toffee profile. Chocolate kept low at 50g, there is no astringency at all in the original. POST BREW - Not dark enough. Up Choc to 1% if make again. Mash efficiency higher with milled grain, so 2-3 points up throughout.
