Taste Notes

Malt syrup and dark honey aromas predominate, followed by a combination of walnut and pine tar aromas. Flavor is also faintly sweet initially but finishes dry with a crisp hop bitterness. Color is medium brown with tan head. Head and lacing is fleeting

Notes

The inspiration for this beer was a recent study showing that buckwheat honey had more anti-oxidants than other honies. Since anti-oxidants have been promoted by the brewing industry, why not try and make a pleasing beer with more anti-oxidants? Buckwheat honey was added at last 15 min of boil. 7.4 *B (calc 2.1 *P) on 8/5/04 and temp moved up to 66F. 2.5 gal to keg and bottled 3.5 gal w/ 2oz corn sugar.
