1.0 pkgs Belle Saison (Danstar #) Yeast 6
1.0 pkgs Brettanomyces Lambucus (Wyeast Labs #5526) Yeast 7
1.0 pkgs Lactobacillus (Wyeast Labs #5335) Yeast 8
5.00 lbs Star Fruit (Secondary 7 days) Misc 9

Notes

1). Mash temp was a little lower. Got it to 145.00. End mash temp after 75 minutes was 140.00. 2). Wort pre boil was 1.033. 3). Final wort gravity was 1.036 which was too high. Added 1/2 gallon of water to get it to 1.034. 4). Had issues with chilling and had to stop. Placed hot wort in the carboy. Now too cold, will pitch yeast later on the second day. Racked some wort off because we filled it with too much. Will use to sour mash. 5). Add the Brett and Lacto on November 6th. Racked beer to the secondary felmentor and added starfruit.
