Notes

Slightly low on vol, but super high on OG (1.074). Matched water perfectly, but cloudy,Calculated for 9 gallons of water mash temp 151.5 x 45 min, increased mash temp to 156 x 30 more min to attempt to get sg up wheat efficiency low, pH too high (5.8) eff only at about 60% add 1.25 lb of pilsnser DME to correct gravity. og = 1.048 Carefully measured boil off rate 7.25gal-5.75gal/1.5 hours (outside temp of 50F)= 1 gal per hour. Racked into secondary 4/5/14, could have used another 1/2 gallon water, mostly lots of trub loss. Smoky, Hoppy, sg=1.013 4/22/14 sg = 1.012 probably ready for the bottle. Bottled 4/25/14 sg = 1.012 with 3.5 oz of dextrose very foamy 7/30/14 Went with morebeer grains and had their machines mill them. Temp in Mashtun claimed 145 towards end of hour- was 140ish at the start. I have no clue what the OG was out of the boil- i got three measure 1.056, 1.045 and 1.040... 1.045 was the most consistent though. FG was 6.1brix - 1.024 so splitting difference and saying OG was 1.050, the result is 1.0008 Primed with 7Oz light DME for each 4.5 gallon bucket Bottled on 9/1 Came out very well, just a hint of smokiness, could use a bit more, but overall pretty damn good.
