Taste Notes

4/23/12 - very fragrant lemongrass/citrus aroma/taste during boil. no basil or pepper noticed. 4/29/12 - nice color, perfectly hazy...faint yellow/orange. Beautiful lemon flavor and faint aroma. Nicely hopped and balanced. No basil. 5/2/12 - excellent lemon flavor and very nice lemon wit! Faint flavor of basil at finish, but not very prominent. Needs more time. Possibly basil tea at bottling. 5/6/12 - still no basil flavor. After adding priming tea, nice basil aftertaste. VERY NICE.

Notes

4/22/12 OG @ 1.051 @ 76 F Lemongrass was cut into 1/2" pieces Basil leaves were crushed by hand 5 min flavoring bag left in while wort was chilling 4/29/12 SG @ 70 = 1.012 Dry hopped with 0.5 oz of washed and thoroughly dried basil. DO NOT SANITIZE. Loses flavor. Temp for secondary dropped to 63-65 F. 5/6/12 - bottled. Made tea with 0.25 oz of basil and priming sugar. Added at boil and boiled ~2 mins. allowed to steep ~ 40 mins. FG 1.012 @ 68 Lemongrass fades initially, but come on stronger with age. As beer sits (oxidizes?), lemon gets stronger. Nice citrus flavor w/o being bitter. No basil character. Double basil, slightly reduce lemongrass.
