Taste Notes
Over all this was one of my best beers ever. It got drank very fast. Good crowd pleaser, everyone liked it. Kept a slight bready flavor and slight sweetness that was good. Definitely a keeper! Notes
***I adjusted this recipe after brewing to match my brew day measurements! READ NOTES BEFORE BREWING AGAIN.

Mash temps hit perfectly at 152* F.
***All aspects of brew day went according to plan except that efficiency came out higher than expected.
***This could be because I adjusted the grain mill ever so slightly to be a smaller gap ( adjusted the dial to about 10 o'clock).
***Based on the gravity readings I got from the refractometer, my efficiency was in the range of 79% — 80%.
Og = 15.25 brix = 1.061
After primary, brix =8
Corrected gravity after primary = 1.013 = 6.25% ABV
After 2 weeks in primary I raised temps to 60 for 24 hours in chest freezer. Then dropped back down to 50 and transferred to secondary 1 day later.
Yeast tastes good and has light biscuit, saltine flavor. Some bitterness is detected from hops. Alcohol also seems to be coming through which is not desired. Will see how it tastes after lagering for a few weeks. This may have to be an Oktoberfest Extra because it exceeds the guidelines.
A crowd pleaser and authentic flavor
