Taste Notes

(ORIGINAL NOTES FROM ibrewalot) Very good beer. Ordered whole hops accidently, but it turned out great even though much more of a pain. Doubled the vanilla from last year and now it's just right! -------------------------------------------------------------------- 28/11/12 - first bottle , a gusher. disappointed by that. plesent aroma, mostly orange and clove. flavour was a bit off, could pick out orange, clove. very dry finish (maybe honey) . also a slight burning plastic bag finish! weird. hope it was just the gushing bottle. the plasic bag was the vanilla. mellowed alot over th enext coupe of weeks. by christmas day it was lovely. Prob needs at lest 30 days in bottle.

Notes

2014: ! item Oragen = jouice 1 item Orange = zest upped clove & ginger to .5 tsp (from .25) cinnamon was ground sticks (smelt great) 2012: (CLARIFICATION FROM ibrewalot) superflyguy - 17 October 2012 - 8:06 am Hi, your Open By Christmas recipe looks pretty good. I was wondering what the vanilla actually is? Extract? Pods? Also the oranges, do you use the juice and peel as in previous recipes or just the peel as stated? much thanks ibrewalot - 17 October 2012 - 9:11 pm It's Vanilla Extract. I never wanted to hassle with the variability and pain of doing the whole vanilla bean soaking thing, so I fine-tuned the amount of real (not imitation) vanilla extract to use over the years. Good luck with the recipe! :-) I use the peel (grated off the oranges) in the boil and the juice of those oranges after the wort has cooled. Vanilla Extract about 30ml reached 1.015 after 48hrs! Final yield 27 500ml bottles
