Notes

Recipe by merddyn (James) from www.simplehomebrewing.com. Misc: OG was 1.2, but brewsmith won't allow you to elevate the potential yeild on the concentrate to the correct level. Passionfruit Concentrate is overly sweet (more than expected) so should consider dialing down the honey on the next batch. SRM calculation is a bit off because it doesn't account for clearing with bentonite, which is dramatic. I'm about a gallon down after initial racking and racking off the bentonite. Going to add 1-2 bottles of syrup, water back to 6 gallons and re-pitch 1122 this week. Flavor: after 2 months in secondary, bentonite, i did a taste test - Mild orange notes, minilar passionfruit. Considering pitching 1-2 bottles of Torani Syrup (passion fruit) to up the fruit flavor. 2 months in I sampled and found it didn't have enough fruit flavor. so I added 2 bottles (25.6 oz each) of Torani Passion Fruit Syrup which is fermentable + 2 tsp of yeast nutrient.
