Taste Notes

First taste on 9-8-14. . .this carbed up nicely in 1 week. It might be too much in the end. Take more notes. The #1 thing that I like is that you cannot taste the alcohol very much. I can tell it is a big beer, but I don't get those telltale fusel alcohol flavors at all. It's very, very roasty, but not bitter. I like that as well. The style guidelines keep talking about dark fruit and malty sweetness and I have tasted those notes on other Baltic Porters. This has neither IMO. I think this is a good Imperial Stout. I think the recipe would work well with some additional chocolate malt and it would be a great imperial stout afterward. To make it a Baltic Porter, I need to figure out how to get more dark fruit flavors. . .maybe additional caramel malts? Special B?

Brewed sunday 7-20-14 No grain substitutions made on this one. LHBS had everything surprisingly. Made a 1 gallon starter 1 week before. Split the starter between two 1 gallon jugs to avoid blowoff. Mashed-in with 7 gallons of water and collected about 4.25 gallons of first runnings at 19.2 brix - 1.080 Sparged with 2 gallons of water for 20 minutes and collected 1.75 gal. at 11.2 brix OG = 19.2 brix 1.080 I think a no-sparge next time would work with this one. Add 9 gallons of water and be done with it. This was bottled on 9-1-2014 with about 3/4 of a cup of dextrose.
