Tired Uncle's El Hefe-weizen

Basics:
Batch size: 23 L
OG: 12°P
FG: 2,5°P
ABV: 5,1%
Water:
Water profile: 0,6:1 sulfate to chloride ratio
3:1 water to grist ratio (~15 L)
Malts:
2,5 kg light wheat malt (3-6 EBC)
1,75 kg pilsner malt (3-5 EBC)
350 g Weyermann Munich type II
150 g Weyermann Melanoidin
Mashing:
Mash temp: 68°C for 60 mins, mash out at 78°C for 10 minutes
Mash pH: 5,4
Sparging:
Sparge with water at 78°C until the total volume is reached (~15 L)
Make sure the pH doesn't get too low, e.g. add 1,5 mL lactic acid, or according to the brewing water profile
Boiling:
25 g Hallertau Mittelfrüh (60 minutes, for ~10 IBUs)
Don't add any kettle finings (i.e. no protafloc, no irish moss etc.)
10 mins whirlpool to get rid of the larger solids
Fermentation:
Pitch 20 g SafAle W-68 at 26°C
Cool to 24°C after the lag phase (i.e. when it starts bubbling heavily)
When fermentation is done, cold-crash and carbonate.
