Red from Red Pig gave me a 10 gallon bourbon barrel, need to fill it with imperial stout. Copied 215 scaled to largest equipment because of the very large grain bill. Increased boil time to 90 minutes for more melanoidin. Set efficiency lower. Recipe had a lot of DME, subbed more Maris Otter but that means I have to use 30 gal mash tun
Recipes had Cascade, don't have any, will sub in Centennial and CTZ. These are all pretty much bittering hops, nothing less than 30 minutes.
BS starter calc for multi stage does not make any sense, went to Brewers Friend. Using 2 paks, 4L per stage, two stages gets to .8 M cells/ml/P, which is a little above standard but for this high gravity is not very high. But it does not take into account O2 added, just std stir plate. Going up to 3 paks makes almost no difference. Don't want to do 3 stage, increase to 5L but 2 pak. That gets me to .99, OK. Goiing to 4 L gives .8. Previous batches were more like .7 and were very tasty. Go with 2 step 5 L
I could easily make another beer with the second runnings. Sparge for this one is only 3 gallons, so I could make up 10 gallons in HLT as usual and have plenty for second batch. After first runoff, switch to another vessel and continue sparging. Could use Grainfather or my old big pot, GF makes more sense. What beer will it be? Regular American stout.
