1/22/13 this ended up being less arrogant, but as of now its a very nice beerNotes
Forgot to add DME with 10 minutes left in boil, realized this after pitching yeast and checking OG
-boiled a gallon of water with the six pounds of dme and added it to the fermenter after cooling
-drained a gallon of beer to give the fermenter more headspace
-going to add 13.33oz of cane sugar to boost the gravity/alcohol to the original specs, probably as fermentation dies down a little bit
-changed the dryhop schedule from equal parts at 10/5 days to double at 5 days
Used wlp007 instead of wyeast1098 (seven bridges didnt have 1098)
