Notes
Turbid mash with rests at 114F/137F/150F, mashout at 175F.
Turbid pulls after 137F rest and 150F rest.
Chilled in fridge to 65F, then racked into bucket (w/ dregs) that previously held 2012 batch. No additional yeast/bacteria were added for primary fermentation.
During the aging period, I pitched fresh slurry of Cantillon brett isolated by Dmitri from BKYeast (C1 and C3).
