Notes

Collected 8.7 gallons of wort of 49 gravity points, which is right on target for the recipe. Interestingly, I could have easily pulled off another gallon of wort. As it was, the 8.7 gallons of wort required boiling off 1.2 gallons to get 7.5 gallons for the fermenters. Exacerbating the problem, I did not get my usual 0.75 gallons/hour of boil-off. The first 0.2 gallons took 45 minutes (0.3 gal/h), but as boil-off proceeded, this increased to 0.6 gal/h. I did not anticipate such variability of boil-off with volume.
