Notes

2023-10-09: Collected 12 G in total and divided 5.5/5.5/1 to Cyser, Cider and Wild Cider. Cyser must has very honey forward flavor. Good. Plain cider is a bit sharp and interesting. Ambient room temp set to 66ºF. 2023-10-10: Active bubbling has begun minimally.Quarter inch of thick rocky medium/dark colored krausen with lots of holes. 2023-10-11: Krausen largley fallen to a skim and some big bubbles. Bubbling regular, about 4 secs. 2023-10-14: Krausen has dropped but it is still bubbling regularly. Just a hint of rotten egg smell I think. I suppose we don’t really know much about this yeast. Certainly could be normal though we would normally associate that with a lager yeast. 2023-10-19: Still bubbling. Yeast or other sediment accumulating on interior walls of fermenter. 2023-10-20: Raised room tempo 2 degrees to 68ºF to encourage continued fermentation. 2023-10-21: I detect a very slight smell of sulfer for some time now so I decided to add more nutrient. I added a 0.5 tsp of Wyeast Yeast Nutrient. 2023-10-27: No krausen, no activity. Dropping ambient room temp to 65ºF. 2023-10-29: Racked to secondary. Honey aroma, tarter and drier than expected. 2023-11-05: Ambient temp lowered to 60ºF. 2023-11-07: Ambient temp lowered to 50ºF. 2023-11-13: Kicked it up to 55ºF yesterday. 2024-01-01: FG is 1.000. Taste is OK. A bit sharp/tart, fruity, interesting, impression of sweet, floral, honey. Perfectly clear. ABV is 7.7%. Racking to keg #16.
