Taste Notes

First tasting(Champagne finish), spicy, hoppy. Hops don't linger. Nice and dry. Very drinkable, but yet not quite what I was aiming for. First tasting (Lacto finish) Lacto was perfect. Spicy, and dry with a perfect sour level. Readings said 2ox of 88% for 5 gal, so this is under a very sour addition. Wish I'd pichted the lacto on day 3, but the liquid came out nice. Not fake/off putting like I was afraid of.

Notes

Mash was started at 148 decresed to 138 deg. Had a lot of hop flakes in boil. Bag was open a little bit. Pitched Lacto (WL 677) 04/23/2014 into one carboy. 4/28, not much evident. Piched too late. Pitched Red Star Pasteur Champagne dry yeast into the other 04/23/14. 04/28/2014 Moved to secondary. Made tea for secondary, cracked 2g Grains of Paridise, 7g Lemon Peel, 5g bitter orange peel. Steeped in 1C boiling water for 5min. Strained. Added 3/4C of the tea to secondary. Second bag of Pacific Jade was bad. Plain secondary got .5 PJ and .5 Summer. Second, Lacto/tea batch got 1oz Summer. Kegged, 05/12/2014. No lacto flavor developed in that side. Added 1.25oz of 88% Lacto to the keg. No noticable 'tea' flavor. Overall good Saison charachter, not too hoppy, which was a concern, yet desire.
