Notes
Water Profile - target balanced Ca 50, Sulfate 50, Chloride 50;
Mash PH - add enough acid malt to achieve 5.2 Mash PH;
Attenuation - Assume Saison Yeast (with diastaticus gene and/or Brett) will attenuate 95%+
OG target = 1.062
FG target = 1.002
ABV = 8%;
Lotus Hops added at hops stand @ 170 for 15min;
Andaliman Pepper (ground very fine) add with hops stand @ 170 for 15min;
Carb Level - target 2.8 volumes;
Yeast selection - The Saisonstein Monster strain listed in recipe as a basline, but feel free to experiment with Brettanomyces and other kinds of yeast strains for added funkiness!!!!
Serve beer @ at 55F degrees (to reduce bitter perception of peppercorn)
