Taste Notes

Great step above the Opala with the hop profile. Mixing half with Opala is a nice blend. Good for Sue. The Simco and Citra at the nose sets is way about from it's sister batch.

Notes

Brewed a total of 13 gallons with Opala brew. Did the hop schedule at 60 minutes, boiled for an additional 8, and then took 5.5 gals out and into fermenter for the Opala Pale Ale, cooled to 68 via chill plate. Full wort out on kettle, 25% on the cold water. Outside temp was 40. Took less than two minutes to cool and fill. Once down to 6 gallons, keeping the boil going, I tossed in the hops for "flame out" time (Simco and Citra) and boiled for an additional 8-10 minutes. Shut flame off, and drained cooled wort into second fermenter in about 2 minutes. Pitched yeast 05 right away. The intent here was to add the additional time that is typically taken to chill down the wort via the immertion chiller, which is typically 25 minutes, and add it to a shortened "boil" time to compensate and keep the hop oils the same. While it was a complete guess, I hope that it'll be close.
