2023_ELD_01-A: TURNED OUT MUCH BETTER THAN THE FIRST RUN OF ELDERBERRY I DID. THE TASTE IS MUCH LIGHTER, AND LESS 'MEDICINAL' TASTING. THOUGH I THINK THIS IS BECAUSE I USED TOO MUCH ELDERBERRY LAST TIME. GIVEN TIME TO AGE, THIS BATCH IS GOING TO DO QUITE WELL. I NEED TO FIND WHAT WILL PAIR WITH THIS FRUIT, BECAUSE IT TASTES LIKE THERE IS A WINDOW FOR SOME OTHER SPICE OR FRUIT TO PAIR UP AND MAKE A COMPLETE TASTE PROFILE.Notes
25FEB2023:
YEAST STARTER: 5G GOFERM, 1 PACKET OF BOURGOVIN RC-212,A SMALL BIT OF HONEY, AND 95-105F WATER MIXED FOR APPROX 30 MINUTES IN A JAR ON THE MAGNETIC TRAY.
PROCEDURE: ADDED 7LB OF PUREED, BOILED, ELDERBERRY TO 12LB HONEY AND TOPPED OFF WITH CHARCOAL FILTERED WATER, AS WELL AS 20G FERMAID O. MIXED WITH POWER DRILL MIXING ATTACHMENT TO OXYGENATE AND MIX THE BATCH. LOTS OF TINY SEEDS LEFT OVER THAT WILL BE A PAIN LATER... ADDED THE STARTER AND LEFT TO FERMENT IN COOL CLOSET.

DEGASSING THE BATCH BY JOSTLING IT AROUND, IN ORDER TO FACILITATE MORE YEAST PRODUCTION IN THE FIRST 3 DAYS, TRY TO DO IT TWICE A DAY.
