Brewed at Wolf Hills with Overmountain Brewers as part of AHA Big Brew 2012. Used Greg's new 15 gal kettle but forgot to adjust recipe for evaporation rate. Missed step infusion temps and ended up doing "protein rest" at 128 for 25 min and mashing at 142 for 45 min. Not surprisingly, missed the pre-boil gravity (I hit 1.044). Must have screwed up the sparge volume or didn't account for grain soaking up so much because I also missed my volume; only about 5 gal pre-boil. Greg's kettle is an evaporation machine compared to my turkey cooker and post-boil volume was about 4 gal (so disgusted with myself that I didn't measure). Post-boil gravity was 1.066 so this is now an IPA. I saw what was happening with the evaporation and so I cut down the boil time from 90 minutes to 75 so it wouldn't be overly hopped for style (whatever that is). It's very doubtful that this symphony of errors will turn out anything like what I intended but rather than add water to add volume and lower gravity, I just decided to cool, pitch and let it go as is and see what I get.
