Taste Notes

7/30 - This mead is pretty incredible. It is a heavy hitter, thick and boozy but has a nice refreshing taste. Tonnes of vanilla and marshmallow. Depth of the honey adds cinnamon, nutmeg, and other fall spices. Acid adjustment helps bring out some red fruit notes of raspberry and currant. Booze is present throughout and is dangerous given the drinkability.

Notes

2/17 - Followed typical must preparation procedures - Aerated with pure O2 for 120 sec - Pitched 2 packets of yeast after rehydrating in GoFerm 2/18 - Hit with 45 sec of O2 in the morning - Added Fermaid O 2/19-2/22 - Degassed multiple times a day and added a dose of Fermaid O each day 2/23 - Added the first addition of 1lb 15ozs of Meadowfoam as gravity had hit 1.032 SG o New gravity 1.056 SG 2/27 - Fermentation is slowing a bit now as ABV is increasing past 14% - Will add another pound of honey later this afternoon 3/12 - Added 1.5lb of honey 7/30 - Completed bench trials and acid adjustments to mead (added 5ml of 10% solution or 0.5 grams of tartaric acid) 9/4 - Separated out into 3 separate containers, one for oak, one for barrel aging, one pure meadowfoam 10/1 - Aged the one with oak for 2 weeks - Added 45 ml of Four Roses single barrel to the BBA batch
