8/13/2022 Started by defrosting the raspberries, weighing in at about 17 lbs total Added honey (starting to crystalize) and 1 gallon of water into carboy, then added fruit ontop Added one more gallon of warm water to bring up to 5 gallons Added Opti-Red, hit with O2 for 120 seconds Pitched yeast after rehydration 8/14 Finally up to temp, added another 30 sec of O2 in the afternoon Fermentation started showing signs around late afternoon Gravity measured at 23.5 Brix (refractometer) or just over 1.100 SG (hydrometer) 8/15 Fermentation is going strong Added Fermaid and FT Rogue Measured gravity around 1.080 or 21 Brix 8/20 Removed fruit 9/3 Transferred from primary Stabilized 9/4 Conducted backsweetening benchtrials w/ meadowfoam, clover, and eucalyptus honeys: all 3 were enjoyable - Clover won warm - Meadowfoam nicer than last time, but a bit too much - Eucalyptus was enjoyable, bringing some dark earthy tones to the berry heavy mead Cold - Clover still wins - Meadowfoam is enjoyable, but still a bit cloying/cough syrupy (maybe try a small batch with oak?) - Eucalyptus aroma was intensified Broke batch out: 3.5 gallons of clover backsweetened to 1.040 (ended at 16.5 Brix) 0.75 gallons of meadowfoam backsweetened to 1.040 with oak (probably from meadowfoam sack mead, ended at 17 Brix) 9/8 - Added sparkolloid to each batch
