Notes

Flame-on: 1pm. Brought 4 gallons of water to 168F over 45 minutes in aluminum pot on stove. Originally added 3.5-3.75 gallons to mash tun, stirred in grains and got a temp of 149. Added remaining water, brought temp to 151F. Checked temp at 15 minutes, still holding at 151F. Ph strip read around 5.0, possibly closer to between 5.0/4.6 than 5.0/5.4. Sparge water ran dry around 2.5 gallons into the kettle. Tilted the HLT to run the water out into the mash tun, continued to run the mash tun into the kettle as if it was a vorlauf. Started bring 4.75 gallons up to a boil at 3:20pm. Reachd boil at about 4pm. After an hour of boil, only lost a little less than .75 gallons. After two hours of boil, lost another .75 gallons. Down to 3.5 At 2:45 into the boil (two hours, forty five minutes), added 8 oz. DME and flame out hops. Fermentation activity calmed on Thursday. After racking to glass 3 gallon carboy it seems like the container is just over half full. If there's two gallons total I'd be surprised. I've never properly marked this carboy for volume. Racked on 4/14/14, Secondary SG was 1.026. Already looks very clear, must be a highly flocculant yeast.
