Taste Notes

Midwinter Homebrew Fest: 35 Comments generally good. Noted that head retention is non existant and its a touch on the sweet side. Note to consider additonal bitterness. Bottle conditioning might help as this was drawn from keg. Also noted that it’s not pretty. Might consider an extended secondary and/or fining agents to clear it up. Might also need some complexity. I like the simplicity but might consider ways to make the flavor a little more dynamic. KC Beirmeisters: 26 Overiding opinion was that it was too much spice and not enough compexity. One mentioned some high alchohol might might hide that with some more caramel sweetness. Consider some caramel malts other specialty grains for complexity. Cascade Cup 38.5 Esters were brought up a lot and according to one sheet crowded out the pumpkin spice and suggested checking yeast health. Strangely said that head retention was good and could use more age. Indiana State Fair 33 One of the best comments: I’m getting all filling but no crust. usual comments. Too much spice not enough beer. One mentioned needing more body. Again might have to consider a more complex barley wine base for the spice and dialing it back by about half.
