Taste Notes

Ancient: Very good flavor profile for my spiced mead. I removed the star anise after 1/4 of a star anise still left too much of the licorice flavor. I have tweaked this recipe a ton, and think this is great. The graham crackers had too much of a bready taste initially, but after about 3-4 months of aging that bread taste went away and faded into a very nice soft graham cracker taste that I was looking for. So if you do graham crackers, let it age a few months for maximum tastiness!
