Taste Notes

Very prominent sulfur notes likely due to yeast strain with the heating of the yeast. I will not try to stress this yeast, at least for a while. The normal process leaves an amazing taste. But aging out past 1 year all of the sulfur notes are gone!

Fermwrap used to heat must to 85F over fermentation period 06APR2021: 3.0g Fermaid K/6.2g DAP 07APR2021: 2.5g Fermaid K/5g DAP, 10 minute manual aeration 08APR2021: 2.9g Fermaid K/5g DAP, no aeration Gravity 1.011 09APR2021: FG 1.01 Split into batches: 1. 3gal + 1.5g Sorbistat 12APR2021: adding 14oz cranberry sauce(simmered) Gravity 1.000, adding 1 cup of honey 1.035 and cranberry has 150g sugar. 2. 1gal - #2 1GA 3. 1gal - #2 1GB 10MAY20211GA/1GB FG1.020 - Sorbated and Bottled into 12oz bottles 1.075-1.011-1.020FG = Estimated 10% alcohol(don't believe it though) ********************************************************************************************************************************************
