Taste Notes

Cysers are so simple and great when you are running low on honey. This batch aged beautifully. The tastes I had at 2,3,4,6 months were all better and better. Semi sweet, earthy/apple in there, and like an apple pie with the cinnamon! Unlike some, they are almost immediately ready for drinking, though aging is best.

Notes

Fermstart 7.0g 30min starter because of hgh gravity oxygenated for 15min after stirring before adding yeast Front Loaded 4 feedings of Fermaid K and DAP, 12g of each. Whoops might have been too much, not sure... 04MAY2021: Oxygen stone for 8min and some stirring, yeast is looking vigorous. 05MAY2021: Last oxygenation, 20min(way too long) Covered the top to finish fermentation. 13MAY2021: Measured gravity at 1.020, still fermenting, estimated ABV 16% 18MAY2021: gravity ay 1.010, still fermenting, tasting better, slight sulfur taste, yeast is likely stressed. 22MAY2021: Fermentation is ended at 1.010, degassed with wand, transfered to 3gal glass carboy. Sulfite, Sorbate, 6g of bentonite added to clear. Did not need to add additional apple juice to bring the level up, may revisit that. 06JUN2021: POST FERMENTATION COMPLETED, GRAVITY MEASURES 1.011 - APPROX 15% ABV BENCH TRIALS: 50ML 1. .075ML SAIGON CINAMMON: LABELLED ACC: 70ML SAIGON CINAMMON ADDED, 25ML INDONESIAN CINAMMON 2. 0.75ML SAIGON CINAMMON, .05ML VANILLA EXTRACT: LABELLED ACV: ACTUAL 30ML VANILLA *******************************************************************************************************************************************************************
