Notes

This is our attempt to create a gluten free clone of Avery’s Eremita VII. This is an attempt to clone an Avery beer that was only available at the brewery. The description given by Avery: “Eremita VII - The 7th installment of our Tap Room only sour series; Eremita VII is a light blonde sour beer (4.5% ABV) aged in oak barrels for 5 months, and then blended with fresh hand-sliced cucumbers and whole-leaf  hibiscus flowers; providing an overwhelming cucumber aroma, mild Brettanomyces funk, and enough hibiscus flowers to give it that beautiful Colorado pink sunset hue.” For the base blonde pale ale we are using our New Grist clone. We changed the hops and yeast to those used in our Eremita VII clone. Fermented 1 week in primary then racked to secondary and added 2 oz French Oak cubes medium toast.
