Acidification en sour keetle Abaissement du pH jusqu'à 4,5 avec acide lactique. Acidification à partir de 400gr de grain en filet. Au bout de 28 heures : pH de 3,4. Belle odeur caractéristique (tart aux pommes / Citron).
